Puff Pancake

Years ago, when I was dating or just married to my husband, we went to breakfast at my mother in laws house and she made this delicious breakfast dish. I was in love. She made it with apples and added some brown sugar to the top and it was like a caramel apple breakfast treat. I had to have this recipe, because she just kept telling me how east it was. Once I got the recipe and tried it myself, I was so surprised.


It's easy enough for a weekday , impressive enough for the weekend. It is one of our absolute favorites, especally my toddler, she calls it apple pie. You can use any fruit you want, fresh or frozen. Our favorites have been apple, peach and blueberry. If you use frozen, like we often do, there is no need to defrost. Just take your frozen fruit and pop it in the hot baking dish. Scroll to the bottom for the variations we have made and enjoy over the changing seasons.

A tip I've heard from others as they've made it, is to ensure your eggs and milk are ideally room temperature. That's what gets you the best puff. We have backyard chickens so we keep our eggs on the counter, so always room temp. I'm also really bad a putting the milk back in the fridge after I pour it into my coffee, so its generally room temp, or the chill of at least, by the time I make this.

Puff Pancake


Ingredients

  • 7 eggs

  • 1 1/2 cup milk (nut milk works too)

  • 1 cup flour

  • 3 tablespoons sugar

  • 1 teaspoon vanilla

  • 1/2 teaspoon salt

  • 1/4 cinnamon

  • 1/4 cup butter

  • 1 cup fruit (or 2 apples)


Directions:

  1. Preheat oven to 425 degrees.

  2. Melt butter in a 13x9 glass baking dish in the oven. Once, melted, while the pan is still in the oven, add the fruit. Close the oven until the butter and fruit start sizzling again.

  3. While your fruit is softening, mix up the remaining ingredients using an immersion blender.

  4. While pan is still in the oven, pour the batter over the fruit. Bake in the oven for 20 minutes or until puffed and brown. Top with powdered sugar. Serve immediately.


Variations:


In the Spring we love to add peaches. If they are super ripe we add them fresh to the top after it comes out of the oven.


In the Summer our favorite is fresh strawberries over the top, not baked in.
