Apple Cider Cinnamon Swirl Bread

There’s something about this time of year that everything slows down.The mornings feel quieter… the air smells crisp and sweet, and somehow, baking feels less like a task and more like a comfort.
Apple cider cinnamon bread just fits this season. It's the kind of bread that fills the whole house with that cozy, spiced-sweet smell that makes everyone wander into the kitchen.
It’s simple — no fancy steps, just whisk, pour, swirl, bake — but it tastes like fall wrapped up in a slice.
That swirl of cinnamon through the middle melts into the batter, giving every bite that warm, brown sugar sweetness. It's rich apple cider flavor, and soft chunks of apple baked throughout. Just the right balance of sweet and spice.
And if you toast a piece the next morning with a little butter? Pure heaven.
Maybe that’s why I love it — it’s not just bread. It’s that feeling of home, of slowing down, of gathering around something warm when the days get shorter.
Apple Cider Cinnamon Swirl Bread
Ingredients:
2 cups flour
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1 1/2 teaspoon cinnamon
1/4 teaspoon nutmeg
1/2 cup softened butter
3/4 cup brown sugar*
3 eggs
1/2 cup reduced spiced apple cider (1 cup un-reduced)
1/4 cup sour cream or unsweetened yogurt
1 teaspoon vanilla
1 apple peeled and diced
Swirl:
1/4 cup brown sugar*
1 teaspoon cinnamon
Glaze:
1/2 cup powdered sugar
1-2 tablespoons apple cider
Directions:
Preheat oven to 350 degrees.
Place one cup of apple cider or spiced cider in a sauce pan and simmer to reduce down to 1/2 cup. Set aside or in the refrigerator to cool.
Cream butter and sugar in a large bowl. Add eggs and beat until light and fluffy, 2 minutes.
Add remaining wet ingredients, vanilla, sour cream and cider.
Mix together dry ingredients in a bowl and mix into wet batter until just incorporated, ensuring not to over mix the batter.
With a rubber spatula, fold in the diced apple. Set batter aside.
Mix the swirl mixture in a small bowl and set aside,
Pour half the batter into a greased loaf pan, add all the cinnamon sugar mixture evenly, followed buy the rest of the batter. Layering batter, cinnamon sugar, batter.
Smooth out the top of the batter. With a table knife inserted into the batter, make a swirl using a figure eight shape.
Bake at 350 degrees for 50-55 minutes, until a tester comes out clean.
Allow to cool slightly before removing from the pan. Pour Glaze over the bread and allow to fully cool.

*Notes: you can replace the brown sugar with coconut sugar if desired.
