Homemade Lunch Meat

Lunch meat is one of those things that if it isn’t organic lunchmeat, we go without. I won’t settle for second best. Why? Did you know lunch meat is a Carcinogen? But why? The process in which they make the processed meat, quality of the meat, cancer causing preservatives, caramel coloring, emulsifiers, nitrates— along with fillers, sugar and mystery ingredients.
All that to say organic lunch meat is pricy and hard for us to find. So when I saw you could make your own, I had to try it.
So much easier than I thought and delicious! Here’s the recipe
Tools:
Lunch meat press: This is really the only tool that you need to make the lunch meat. It is the only way you can make the lunch meat. There isn't a substitute that i've found that can replace it.
Mandolin: this is what I've used to slice the meat in the past and it works great. I have since graduated to this electric slicer. We use the electric one so much. I slice my homemade soft sourdough bread with it, bulk cheese from azure standard,
and our lunch meat. It's well worth the investment.
Turkey Lunch Meat
Ingredients:
2 lbs organic ground turkey
2 teaspoon salt
1 teaspoon pepper
1 teaspoon dried basil
1/2 teaspoon smoked paprika
Canister coating:
1 teaspoon salt
1 teaspoon pepper
1 teaspoon dried basil
Directions:
Mix the turkey, salt, pepper, basil, and smoked paprika together with a mixer.
Spray canister with avocado oil, sprinkle remaining salt, pepper, and dried basil on the oil so the lunch meat will have the pepper herbed outside or 'crust'.
Fill canister, add spring and put the lid on. Add a thermometer.
Add canister to simmering (not boiling) water. Simmer very low (important to not let water boil) until reaching an internal temp of 165 degrees Fahrenheit. About 1 hour and 20 minutes.
Remove, allow to slightly cool, then put in the fridge over night.
Remove to meat and slice thinly.
The lunch meat keeps in the fridge for about a week. I like to slice on a mandolin or an electric slicer. You can find them relativly in expensive on Amazon.
