Bulk Dry Muffin Mix

I love fresh baked muffins during the week, but mixing together all the dry ingredients seems so tedious. I started making this bulk measured mix so all I need to do is add the wet ingredients. Almost the same concept as a box cake mix, but muffins, and all from scratch. This has made weekday mornings such a breeze.


I give the jar a nice big shake to incorporate everything well, measure out the dry ingredients, add the wet, along with any other add ins. You can make these as simple or elaborate as you want.


Our regular rotations are, apple cinnamon or blueberry almond with a crumb topping, pumpkin chocolate chip, banana nut, or orange cranberry. The sky is the limit with what you want to imagine.

Bulk Muffin Mix

Ingredients for dry mix:

  • 8 cups flour

  • 2 - 2 1/2 cups sugar (coconut sugar works great too)

  • 1/3 cup baking powder

  • 1 1/2 teaspoon salt

  • 1 Tablespoon cinnamon


Directions:

  • Measure all ingredients into a large jar and mix.

  • Before measuring out for a muffins, give the jar a shake to incorporate.



For complete muffins:

  • 2 1/2 cups dry mix

  • 1 cup milk (nut milks work too)

  • 3 Tablespoons melted butter

  • 1 egg

  • 1 teaspoon vanilla

  • 1/2 - 1 teaspoon additional spices or extracts

  • up to 1 cup add ins (like fruit and/or nuts)


Directions:

  • Measure out dry ingredients, add milk, melted butter egg, vanilla or other extracts, additional spices and mix ins, like blueberry, banana, apple, nuts, or dried fruit.

  • Bake at 350 degrees convection for 15-20 minutes. A few minutes longer for standard oven setting.



I like to write the complete muffin recipe on a recipe card and tape it to the outside of glass jar. This way, early in the morning I dont even have to scramble to find the recipe. Any way to make my life easier.
