Being a child from the 90's, this was a childhood staple that quickly became a family favorite. This was long before we knew that the pre-boxed and packaged foods were as bad as they are for us.
I have since created a from-scratch recipe of this nostalgic food that my kids have become obsessed with.
It pares perfectly with roasted or grilled chicken and meatloaf. I know, I know, that's a controversial food, but truth be told, my recipe is delicious.
What makes this rice a roni copy-cat recipe even better, is that you dont have to stand over a hot stove, you make it entirely in the instant pot! Check out the recipe below.
Homemade Rice a Roni
Ingredients:
5 tablespoons butter
4 oz spaghetti (broken into 1 inch pieces)
2 cups white jasmine rice
1 teaspoon garlic powder
2 1/2 teaspoons salt
1/2 teaspoon turmeric
3 1/3 cups bone broth or chicken stock
1-2 tablespoons chopped fresh parsley
Directions:
Turn the instant pot onto sauté mode and melt the butter. When melted add broken spaghetti pieces. Toast them in the butter for 2-3 minutes until golden brown.
Add rice and sauce together for 2-3 minutes. Add the spices and sauté for about 30 seconds for them to bloom.
Add the broth, scraping the bottom the of the pot and the sides, insuring all the rice and noodles are covered.
Turn the instant pot off and turn back on 'pressure cook high' for 10 minutes. After the cooking is done, allow 5 minutes of natural release, followed by quick release.
Add the chopped parsley and mix in by fluffing with a fork.
