Cinnamon Raisin Bread

There is just something so nostalgic for me about cinnamon raisin bread for a sweet breakfast treat. In our house growing up we ate pretty healthy and my mom cooked most meals from scratch so it was a special treat when we would get a store-bought treat like this for breakfast.


The base of the dough is my Soft Sourdough Sandwich Bread, and that recipe does make 2 loaves. So, you could make one loaf of regular bread and one cinnamon raisin bread or both cinnamon raisins. In the dough itself there is no added sugar so to me it's not considered a 'sweet bread'. We do have a child that is anti-raisin and I have omitted them and it has turned out delicious. So, you most certainly can make changes.


Cinnamon Raisin Bread

Makes 2 loaves


Ingredients:

  • 1 recipe of Soft Sourdough Sandwich Bread (recipe here)

  • 1/4 cup brown sugar (or coconut sugar)

  • 1 heaping tablespoon cinnamon

  • 1/4 cup raisins


Directions:

  • Once bread is completed fermenting 10-12 hours, divide the dough in half.

  • With one half of the dough, stretch out to a 18 x 9 rectangle abnd sprinkle with brown sugar, cinnimon and raisins. Press them in to the dough lightly and slowly roll up the dough into a log shape, tucking in the edges.

  • Place seam side down in a greased loaf pan. Allow to rise on the counter until almost doubled.

  • Bake at 375° for 35-40 min. Allow to cool before slicing to prevent from a gummy inside.
